Polysorbate 20 (common commercial brand names include Scattics, Alkest TW 20 and Tween 20) is a polysorbate-type nonionic surfactant formed by the ethoxylation of sorbitan before the addition of lauric acid. Its stability and relative nontoxicity allows it to be used as a detergent and emulsifier in a number of domestic, scientific, and pharmacological applications. As the name implies the ethoxylation process leaves the molecule with 20 repeat units of polyethylene glycol; in practice these are distributed across 4 different chains, leading to a commercial product containing a range of chemical species. Polyoxyethylene (20) sorbitan monolaurate; Montanox 20; Polysorbate 20; PEG(20)sorbitan monolaurate; Alkest TW 20; Tween 20; Polysorbate 20 is used as a wetting agent in flavored mouth drops such as Ice Drops, helping to provide a spreading feeling to  ingredients like SD alcohol and mint flavor. Polysorbate 20 is used as an excipient in pharmaceutical applications to stabilize emulsions and suspensions. Polysorbate 20 is used by philatelists to remove stamps from envelopes and to remove residues from stamps, without harming the stamp itself.

Polysorbate 20 is also used as wetting agent in rubber balers in the elastomer industry.

; PEG(20)sorbitan monolaurate; Alkest TW 20; Tween 20. Les polysorbates sont des esters d'acides gras et de polyoxyéthylène sorbitane (dérivé éthoxylé du sorbitane). Constitués ainsi d'une chaîne aliphatique hydrophobe (l'acide ou les acides gras) et d'une « tête » éthoxylée hydrophile, ce sont des molécules amphiphiles utilisées comme tensioactifs (émulsifiants), dont la HLB dépend des acides gras en jeu et du nombre de fonctions éthoxy.

Cinq d'entre eux sont utilisés comme additifs alimentaires.

E436 Tristéarate de polyoxyéthylène sorbitane (polysorbate 65) .                                                                                                                                                                                                          Polysorbate,  a  substance  prepared  by  the  reaction  of  sorbitan  fatty  acid  ester  (a  nonionic  surfactant)  with  ethylene  oxide1),  is  widely  used  in  many  foreign  countries,  including  the  U.S.  and  the  EU,  where  it  acts  as  an  emulsifier,  dispersant  or  solubilizer  in  many foods, including bread, cake mix, salad dressing, shortening oil and chocolate2) 3). At  the  17th  Meeting  of  the  Joint  FAO/WHO  Expert  Committee  on  Food  Additives  (JECFA)  in  1973,  an  ADI  of  0-25 mg/kg body weight/day was set for polysorbate 40 (not included  in  this  designation  study),  as  well  as   for   polysorbate   20,   polysorbate   60,   polysorbate 65 and polysorbate 80, as a group of compounds4). A draft of standards for use of polysorbates was proposed by the Codex Alimentarius Commission. In  the  U.S.,  polysorbates  were  approved  as  food  additives  at  the  beginning  of  the  1960s,  and  their  use  in  foods,  the  maximum  concentrations,  and  the    ingredients  allowed were specified for polysorbate 60, polysorbate 65 and polysorbate 80. Polysorbate 20, polysorbate 60 and polysorbate 80 can also be used as synthetic flavoring substances or auxiliary substances4).
