L'acétate de sodium est un composé de formule CH3COO- Na+. Il est soluble dans l'eau et constitue une bonne source d'ions acétate. Sa solution aqueuse est basique en raison de la réaction :

 

 

CH3COO- Na+ + H2O {\displaystyle \rightleftharpoons }\rightleftharpoons CH3COOH + HO- Na+.
Ce composé est utilisé pour faire des expériences simples de solutions aqueuses sursaturées.

Synthèse
L'acétate de sodium est une base conjuguée de l'acide acétique. En conséquence, il est extrêmement simple de le synthétiser en mélangeant cet acide (habituellement en solution à 5-8% sous forme de vinaigre) avec du bicarbonate de sodium, du carbonate de sodium ou de la soude caustique (hydroxyde de sodium). Les autres produits de ces réactions sont de l'eau (et du dioxyde de carbone dans les deux premiers cas).

 

Les réactions qui entrent en jeu sont les suivantes :

Bicarbonate de sodium :

 

CH3COOH + NaHCO3 → CH3COONa + H2CO3
H2CO3 → CO2 + H2O
Carbonate de sodium :

 

 

2 CH3COOH + Na2CO3 → 2 CH3COONa + H2CO3
H2CO3 → CO2 + H2O
Soude caustique : CH3COOH + NaOH → CH3COONa + H2O

 

L'acétate de sodium apparaît également comme sous-produit de la saponification des acétates d'alkyle par la soude.

 

Réactions
L'acétate de sodium peut être utilisé pour synthétiser des esters suivant la réaction de substitution :

 

CH3COONa + RBr → CH3COOR + NaBr

L'acétate de sodium peut également former du méthane (CH4) par décarboxylation sous certaines conditions (pyrolyse en présence d'hydroxyde de sodium) :

 

CH3COONa + NaOH → CH4 + Na2CO3Cette réaction est catalysée par les sels de césium.
Utilisations
On retrouve dans le commerce des pochettes vendues comme sources de chaleur portatives (chaufferettes). Ces pochettes contiennent une solution aqueuse saturée en acétate de sodium. En sursaturation, la température de dissolution étant à 54 °C pour une solution à 20 %[réf. nécessaire], ce qui est bien au-dessus de la température ambiante. Une variation de pression (par trituration) ne suffit pas, en règle générale, à provoquer la précipitation. En tordant une plaquette métallique à l'intérieur du liquide, on libère des germes d'acétate solidifié qui déclenchent la cristallisation et la solution devient solide8. Cette transformation est exothermique, ce qui signifie qu'elle s'accompagne d'un dégagement de chaleur, suffisant pour procurer un réconfort à l'utilisateur. On dissout à nouveau le sel en plaçant la pochette dans de l'eau très chaude ; même en refroidissant, l'acétate de sodium demeure en solution.
L'acide acétique est un acide naturel dont le sel est un agent conservateur (numéro E262) présent dans les fruits et les produits fermentés9.
A la Belle Époque, l'acétate de sodium était considéré par les médecins comme un médicament diurétique et révulsif.

Tanımı ve Kullanım Alanları :

Sodyum Asetat; Görünümü beyaz toz şeklinde olan ve suyla tepkimeye girdiği anda sıvılaşan asetik asitin sodyum tuzudur. Sodyum Asetat'ın kimyasal adı '' Sodium Acetate '' olarak geçmektedir. Kimyasal formülü '' C2H3NAO2 '' olan anhidrit yapıdaki sodyum asetat suda çözünüm göstermektedir. Tehlikeli bir ürün değildir.

Sodyum asetatı ciltle ve gözle temas ettiği durumlarda bol suyla yıkanması yeterli olur. Yutulması durumunda ise hemen bol su içilmeli ve doktora gidilmesi gerekir. Yanıcıdır, yangın durumunda tehlikeli gazlar oluşumu ortaya çıkabilir. Söndürmek için su, karbondioksit, köpük ve toz kullanabilirsiniz. Depolama şekli ise özel bir alana ihtiyaç yoktur. Normal, serin, kuru, onaylı ambalajlarda ve depo koşullarında muhafaza edilir. Sakladığınız alanın +5 ile +30 derece arasında olması gerekir. Bu renksiz tuz elde edilişi kendine has özellikleri sayesinde geniş bir kullanım alanına sahiptir.

Özellikle doğa sporlarıyla uğraşan dalgıçlar, arama kurtarma ekiplerinin ilk yardım çantalarında eksik etmediği ''Heat Pack'' adı verilen ani ısıtıcı torbaciklarinin içinde sodyum asetat maddesi bulunur. Çünkü sodyum asetat tepkimeye girerken etrafına ısı yaymaktadır. Bu özelliğinden faydalanılmıştır. Isıtıcı torbanın diğer kullanımlarda ise bize kolaylık sağlaması amacıyla; araba koltuklarını ısıtmada, donmuş boruları çözdürme de, bebek biberonlarını ısıtmada hatta ağrıyan bileklerimiz için yastık görevi bile görmektedir.

Tehlikeli bir ürün olmayan sodyum asetat genellikle okullarda laboratuvar ortamlarında tepkimelerin gösterilmesi için kullanılmaktadır.

Sodyum Asetat ya da Avrupa Birliğinin verdiği adıyla E262 asetik asitin sodyum tuzudur. Kimya ve tekstil sektöründe farklı amaçlarla geniş bir kullanım alanına sahip olan sodyum asetat gıda sanayinde lezzet arttırıcı ve koruyucu olarak kullanılan bir katkı maddesidir. Piyasada sodyum asetat susuz (yapısında su molekülü içermeyen) ve hidrate (yapısında su molekülü içeren) olmak üzere iki formda bulunur. Susuz sodyum asetat beyaz renkli ve kokusuz toz granüller şeklinde; hidrate sodyum asetat ise çok hafif asetik asit kokusuna sahip şeffaf kristaller halindedir. Canlılarda Sodyum Asetat
Sodyum asetat pek çok meyvede doğal olarak bulunan asetik asitin sodyum tuzudur. Katkı maddesi olarak kullanıldığı gıdanın tüketimi ile vücuda alındığında sodyum asetat hızlı bir şekilde sodyum ve asetata ayrışır. Tüm vücut sıvılarında ve dokularında bulunan sodyum ince bağırsakta emilir; ter, idrar ya da dışkı ile atılır.[1] Hücrenin doğal bileşenlerinden olan asetat ise genellikle dokularda metabolize olur ve çeşitli ara ürünlere dönüştürülerek kullanılır.

Sodyum Asetatın Sağlığa Etkileri
Gıda katkı maddesi olarak kullanıldığı miktarlar bakımından sodyum asetatın herhangi bir olumsuz sağlık etkisi yoktur. Bununla birlikte bazı hassas bünyeli insanlarda sodyum asetat içeren gıdaların tüketimi genellikle sindirim rahatsızlığı şeklinde ortaya çıkan semptomlara yol açabilir. Sodyum asetatın çok nadir görülen bu etkisi genellikle sirke tüketimine hassas olan insanlarda görülür.
Serum olarak kullanılan ürünlerde bulunan sodyum asetatın su kaybı, aşırı sodyum alımı ve kan potasyum oranının azalması gibi çeşitli yan etkileri görülebilir.
FAO/WHO (Birleşmiş Milletler Gıda ve Tarım Örgütü/Dünya Sağlık Örgütü) tarafından oluşturulmuş Gıda Katkı Maddeleri Ortak Uzman Komitesi sodyum asetatın hidrate formunun insan sağlığına olumsuz etki yapmadan günde en fazla 15 mg/kg vücut ağırlığı şeklinde alınabileceğini belirlemiştir. Susuz sodyum asetat için herhangi bir sınırlama yapılmamıştır.[2]

Sodyum asetatın üretimi: Endüstriyel sodyum asetat üretiminde asetik asit ile sodyum karbonat ya da sodyum hidroksit tepkimeye sokulur. Tepkime sonucu elde edilen sodyum asetat konsantrasyon ve kristalizasyon aşamalarına tabi tutularak granül ya da toz haline getirilir. En son aşamada sodyum asetat nem geçirmez malzemeler kullanılarak ambalajlanır ve satışa hazır hale getirilir.[3]

Biotechnological
Sodium acetate is used as the carbon source for culturing bacteria. Sodium acetate is also useful for increasing yields of DNA isolation by ethanol precipitation.

 

 

Industrial
Sodium acetate is used in the textile industry to neutralize sulfuric acid waste streams and also as a photoresist while using aniline dyes. It is also a pickling agent in chrome tanning and helps to impede vulcanization of chloroprene in synthetic rubber production. In processing cotton for disposable cotton pads, sodium acetate is used to eliminate the buildup of static electricity.

 

 

Concrete longevity
Sodium acetate is used to mitigate water damage to concrete by acting as a concrete sealant, while also being environmentally benign and cheaper than the commonly used epoxy alternative for sealing concrete against water permeation.[9]

 

 

Food
Sodium acetate may be added to food as a seasoning, sometimes in the form of sodium diacetate, a one-to-one complex of sodium acetate and acetic acid,[10] given the E-number E262. It is often used to give potato chips a salt and vinegar flavor.

 

 

Buffer solution
A solution of sodium acetate (a basic salt of acetic acid) and acetic acid can act as a buffer to keep a relatively constant pH level. This is useful especially in biochemical applications where reactions are pH-dependent in a mildly acidic range (pH 4-6).

Sodium acetate is also used in heating pads, hand warmers, and hot ice. Sodium acetate trihydrate crystals melt at 136.4 °F/58 °C[11] (to 137.12 °F/58.4 °C),[12] dissolving in their water of crystallization. When they are heated past the melting point and subsequently allowed to cool, the aqueous solution becomes supersaturated. This solution is capable of cooling to room temperature without forming crystals. By pressing on a metal disc within the heating pad, a nucleation center is formed, causing the solution to crystallize back into solid sodium acetate trihydrate. The bond-forming process of crystallization is exothermic.[13] The latent heat of fusion is about 264-289 kJ/kg.[11] Unlike some types of heat packs, such as those dependent upon irreversible chemical reactions, a sodium acetate heat pack can be easily reused by immersing the pack in boiling water for a few minutes, until the crystals are completely dissolved, and allowing the pack to slowly cool to room temperature.[14]

 

Preparation

For laboratory use, sodium acetate is inexpensive and usually purchased instead of being synthesized. It is sometimes produced in a laboratory experiment by the reaction of acetic acid, commonly in the 5-8% solution known as vinegar, with sodium carbonate ("washing soda"), sodium bicarbonate ("baking soda"), or sodium hydroxide ("lye", or "caustic soda"). Any of these reactions produce sodium acetate and water. When a sodium and carbonate ion-containing compound is used as the reactant, the carbonate anion from sodium bicarbonate or carbonate, reacts with hydrogen from the carboxyl group (-COOH) in acetic acid, forming carbonic acid. Carbonic acid readily decomposes under normal conditions into gaseous carbon dioxide and water. This is the reaction taking place in the well-known "volcano" that occurs when the household products, baking soda and vinegar, are combined.
