  Sodium acetate, also known as sodium ethanoate (abbreviated as NaOAc), is a sodium salt of acetic acid, which is largely use in food, textile, pharmaceutical and chemical industries.Sodium acetate is a salt that acts as a leveling agent and a buffer to maintain the pH of 4.5 to 5 during the entire dyeing time. The addition of sodium acetate helps to keep the fiber soft and damage free. This is particularly useful when dyeing with Telana dyes.

Sodium acetate (CH3COONa) is the sodium salt of acetic acid. It appears as a colorless deliquescent salt with a wide range of applications. In industry, it can be used in textile industry to neutralize sulfuric acid waste streams and as a photoresist upon using aniline dyes. In concrete industry, it can be used as a concrete sealant to mitigate the water damage. In food, it can be used as a seasoning. It can also be used as a buffer solution in lab. In addition, it is also used in heating pads, hand warmers and hot ice. For laboratory use, it can be produced by the reaction between acetate with the sodium carbonate, sodium bicarbonate and sodium hydroxide. In industry, it is prepared from the glacial acetic acid and sodium hydroxide.

Anhydrous salt is a colorless crystalline solid; density 1.528 g/cm3; melts at 324°C; very soluble in water; moderately soluble in ethanol. The colorless crystalline trihydrate has a density 1.45 g/cm3; decomposes at 58°C; is very soluble in water; pH of 0.1M aqueous solution is 8.9; moderately soluble in ethanol, 5.3 g/100mL.

 

Uses

 

Sodium acetate is a mordant in dyeing. Other applications are in photography, as an additive to food, in purification of glucose, in preservation of meat, in tanning, and as a dehydrating agent. In analytical chemistry it is used to prepare buffer solution.Sodium acetate can be used to preserve processed meats and it is often used in combination with other acid based preservatives like lactates and propionates. The typical inclusion level is 0.2 to 0.5%. Sodium acetate is also used in salad dressings and ready-to-eat meals.

When sodium acetate reacts with strong acids, irritating, noxious vapors of acetic acid are usually produced. Sodium acetate is sufficiently basic to catalyze the violent polymerization of diketene, perhaps as well as other reactive dimers that are susceptible to polymerization in the presence of a mild base.

In processing cotton for disposable cotton pads, sodium acetate is used to eliminate the buildup of static electricity.

Sodium acetate is used to mitigate water damage to concrete by acting as a concrete sealant, while also being environmentally benign and cheaper than the commonly used epoxy alternative for sealing concrete against water permeation.

 

Food

Sodium acetate may be added to food as a seasoning, sometimes in the form of sodium diacetate, a one-to-one complex of sodium acetate and acetic acid,[10] given the E-number E262. It is often used to give potato chips a salt and vinegar flavor.

 

Buffer solution

As the conjugate base of acetic acid, a solution of sodium acetate and acetic acid can act as a buffer to keep a relatively constant pH level. This is useful especially in biochemical applications where reactions are pH-dependent in a mildly acidic range (pH 4-6).

 

 

 

Sodium acetate is also used in heating pads, hand warmers, and hot ice. Sodium acetate trihydrate crystals melt at 136.4 °F/58 °C (to 137.12 °F/58.4 °C),[12] dissolving in their water of crystallization. When they are heated past the melting point and subsequently allowed to cool, the aqueous solution becomes supersaturated. This solution is capable of cooling to room temperature without forming crystals. By pressing on a metal disc within the heating pad, a nucleation center is formed, causing the solution to crystallize back into solid sodium acetate trihydrate. The bond-forming process of crystallization is exothermic. The latent heat of fusion is about 264–289 kJ/kg. Unlike some types of heat packs, such as those dependent upon irreversible chemical reactions, a sodium acetate heat pack can be easily reused by immersing the pack in boiling water for a few minutes, until the crystals are completely dissolved, and allowing the pack to slowly cool to room temperature.

 

Preparation

 

For laboratory use, sodium acetate is inexpensive and usually purchased instead of being synthesized. It is sometimes produced in a laboratory experiment by the reaction of acetic acid, commonly in the 5–8% solution known as vinegar, with sodium carbonate ("washing soda"), sodium bicarbonate ("baking soda"), or sodium hydroxide ("lye", or "caustic soda"). Any of these reactions produce sodium acetate and water. When a sodium and carbonate ion-containing compound is used as the reactant, the carbonate anion from sodium bicarbonate or carbonate, reacts with hydrogen from the carboxyl group (-COOH) in acetic acid, forming carbonic acid. Carbonic acid readily decomposes under normal conditions into gaseous carbon dioxide and water. This is the reaction taking place in the well-known "volcano" that occurs when the household products, baking soda and vinegar, are combined.

 

 

What Is Sodium Acetate Salt?

 

Sodium acetate salt, or simply sodium acetate, has many practical uses. It is the conjugate base of a weak acid, meaning that it only partially ionizes when dissolved in water. This provides sodium acetate with buffering properties, that is the ability to maintain solutions at a relatively constant pH despite acid or base challenges. This property along with its low toxicity, helps explain why sodium acetate can be found in industries ranging from petroleum production to food flavoring.

 

Chemically, sodium acetate contains one sodium or Na atom, two carbon or C atoms, two oxygen or O atoms, and 3 hydrogen or H atoms for every one molecule of sodium acetate. While technically the formula can be represented as C2H3NaO2, this version fails to provide much information other than the component atoms. To better understand the chemistry, a more instructive representation looks like CH3COONa. In this case, the arrangement of the atoms in the formula illustrates the presence of an acetate or CH3COO- group and the balancing sodium or Na cation. The molecular weight of sodium acetate is 82.03 g/mole. Physical Properties

 

Physically, sodium acetate appears as a white hygroscopic or water-attracting crystalline powder. The pure substance has a melting point of 58 degrees C or 136 degrees F, and completely decomposes at the boiling point of 120 degrees C or 248 degrees F. Sodium acetate dissolves readily in water, having a solubility of 500 g/L at 20 degrees C. Crystals have a basic pH of about 7.5 to 9.0.

 

Safety

 

The safety of sodium acetate has been studied extensively in rat and mouse animal models. When given orally, the lethal dose that will kill half a population of rats is 3530mg of sodium acetate per kg of rat body weight. If inhaled rather than ingested, the dose required to kill half the rat population is much higher, over 30 g/m3 per hour. In mice, a subcutaneous or under the skin injection of 3200mg/kg of body weight will kill half of a mouse population, similar to the ingestion of sodium acetate in rats. However, orally mice can withstand much more than rats; the lethal dose for half the population of mice being 6891mg/kg of body weight. In humans, inhalation of sodium acetate may cause a cough and sore throat. Direct skin or eye contact may cause redness and irritation. However, overall, toxicity in humans is minimal.

 

Homemade Sodium Acetate

Sodium acetate can be made with the common household ingredients baking soda and vinegar. Wear safety goggles as the splashing of solutions into your eyes can be irritating. Baking soda or sodium bicarbonate and vinegar or acetic acid react to form sodium acetate along with carbon dioxide and water. To begin the reaction, add one heaping spoonful of baking soda to a glass container. Slowly add vinegar, being careful not to create too much foam. Keep adding vinegar while stirring the mixture. Once the mixture stops bubbling, you can stop adding vinegar as all of the sodium bicarbonate has converted to sodium acetate, carbon dioxide -- which are the bubbles you saw -- and water. To separate out the sodium acetate from the water, boil the solution until you hear a sizzling and popping sound. At this point, if you blow across the top of the surface, crystals will form. When you get this super-saturated sodium acetate solution, cool the solution to room temperature; it will form a translucent gel. Scrape the gel into a bowl lined with a coffee filter, which will absorb any remaining water. Break up the pieces with the back of a spoon and put them on another coffee filter to finish the drying process, creating sodium acetate powder.
